A simple, mild fresh cheese popular in the United States, made by pressing cottage cheese to drain out much of the liquid, resulting in a firmer, drier product. Farmer cheese has a crumbly-to-smooth texture depending on how much it's pressed, and a clean, slightly tangy flavour. It's closely related to pot cheese and quark, and appears frequently in Eastern European-American cooking — think blintzes, pierogi filling, and cheesecakes — as well as being spread on bread or crackers as a simple snack.
She used farmer cheese instead of ricotta in the blintzes and nobody could tell the difference.
