An obsolete American term for Whit Monday or Pentecost Monday — the day after Pentecost Sunday. 'Pinkster' is a Dutch-derived word for Pentecost (Pinksteren), reflecting the Dutch colonial influence in early New York and New Jersey. Pinkster celebrations were particularly significant in Black American and Dutch-heritage communities in the northeastern US.
In the old Dutch settlements, Pinkster Monday was marked with festivals and dancing.
