From Hindi 'zaminkand' (earth-tuber), a compound of 'zamin' (earth) and 'kand' (tuber). The elephant foot yam (Amorphophallus paeoniifolius) produces an enormous underground corm that can weigh up to 10 kg. It is a staple in South and Southeast Asian cuisines, popular in curries and street food, and valued in Ayurvedic medicine.
