It was developed at a confectionery called Seavey’s in the 1870s, at the time Maine was the number one potato producer in the country. Idaho didn’t surpass us until frozen french fries became popular in the 1950s.
Very often, they replace French fries. Other times, they are a breakfast feature. In this Canadian household, that is.
