A charming regional term with two overlapping uses: in Pennsylvania dialect, dippy eggs are fried eggs cooked over easy — with the yolk left runny for dipping toast into; in British usage, dippy eggs are soft-boiled eggs served in an egg cup, again with a runny yolk perfect for dipping toasted soldiers into. Either way, the name is entirely functional — it's an egg you dip things into. The term has a warm, nostalgic childhood quality in both traditions.
